Wash the apples and peel them with a peeler and cut them into bite-sized cubes. Sprinkle the shell shavings with 1/2 tablespoon sugar and a little cinnamon and roast in the preheated oven on a baking sheet for 10-15 minutes to taste. Personally, I like them crispy with a golden to brownish color.
Meanwhile, put the apple pieces with the remaining sugar, salt and cinnamon in a small saucepan and bring to the boil. Depending on how juicy the apples are, add a little water.
After the apples have simmered for 5 minutes, add the starch dissolved in 2 tablespoons of cold water and bring to the boil briefly.
Arrange the compote in bowls and decorate with the crunchies. Sprinkle with a little cinnamon if necessary.
It also tastes good with 1 tablespoon of milk or other fruits.
