Sweeten the quark to taste with a little sugar and a packet of vanilla sugar. Whip the cream with the vanilla sugar and cream stiffener until stiff. Layer some ladyfingers, half a glass of applesauce and the whole quark in a baking dish. Put another layer of ladyfingers on top, cover with the rest of the applesauce and the cream. Finally decorate with cinnamon. Chill for an hour.
