- Peel and roughly chop the onions and garlic. Heat a pan, pour in the olive oil and fry the chopped onion and cloves of garlic.
- Cut the aubergines into cubes, add to the onions and fry with the curry powder. Now deglaze with the coconut milk.
- Now stir in the lime zest and simmer gently for 10 minutes.
- Goes well with poultry!
