Instructions

  1. Peel and roughly chop the onions and garlic. Heat a pan, pour in the olive oil and fry the chopped onion and cloves of garlic.
  2. Cut the aubergines into cubes, add to the onions and fry with the curry powder. Now deglaze with the coconut milk.
  3. Now stir in the lime zest and simmer gently for 10 minutes.
  4. Goes well with poultry!
