- Drain a can of lentils. Wash and dice the red peppers and dice the mango, or use the frozen version. Add both to the lentils.
- Make a dressing from oil, vinegar, honey, mustard, salt and pepper and pour over the salad.
- Mix everything well and, if you like, add a little rocket.
- Thanks to frozen mango, the salad stays fresh and chilled and is therefore also very good to take away.
