Cook the pasta according to the instructions, drain and drain well.
Clean the spring onions and cut into 2cm long pieces. Roughly chop the peanuts. Squeeze the lime in half.
Whisk 2 tablespoon lime juice in a bowl with sugar, soy sauce and eggs.
Heat the oil in a large, non-stick pan. Lightly sweat the garlic and chilli in it. Add spring onions and fry for 3 minutes. Add the pasta and stir-fry for another 3 minutes (ideally with two tablespoons). Pour the egg mixture over it and fry over medium heat while stirring and bring the egg to a set. Mix in the peanuts and season with lime juice and salt.
