Rinse the quinoa in a fine sieve with hot water, drain well and add to the boiling vegetable stock. Simmer gently for 15-20 minutes until it is really dry.
Now shape 12 to 15 patties from the mixture and either fry them in a pan in hot oil or bake them in the oven on a baking sheet lined with baking paper (at 200 degrees for approx. 40 minutes).
By the way, I like to use colored quinoa, i.e. white quinoa mixed with red and / or black quinoa.
