Instructions

  1. Rinse the quinoa in a sieve with hot water so that the bitter substances are removed. Simmer two parts water and one part quinoa in slightly salted water over low heat for about 15 minutes, the quinoa should still be al dente. Let cool down.
  2. In the meantime, rinse the cucumber, cut in half, remove the seeds with a teaspoon, dice the cucumber. Peel and core the mango, also dice the pulp. Rinse the blueberries, drain well.
  3. Carefully mix the quinoa, cucumber, fruit and mint cut into strips and fold in the dressing made from two tablespoons of lime juice, finely grated lime zest, oil, salt and pepper. To taste.
  4. If the salad is too dry for you, you can also add cold vegetable broth.
