Instructions

  1. Put quinoa in 500 ml boiling, salted water. Simmer gently for 10 minutes with the lid on. Turn off the stove and leave it covered for another 5 minutes. Drain and spread on a large plate to cool.
  2. Mix the quinoa with the vegetables, herbs and nuts. Whip the olive oil and lime juice into the emulsion, add, mix and season with salt / pepper.
  3. Arrange on plates and decorate with a few lettuce leaves and herbs.
