Cook the quinoa according to the instructions, drain and set aside, allow to cool a little. Mix the cucumber, tomatoes, black olives, coriander, paprika and onions in a bowl and add the quinoa. Season to taste with salt and pepper. Make the dressing from the remaining ingredients (except for the cress) to taste and mix with the salad. Then fold in the cheese so that it doesn`t crumble too much. Decorate the plates nicely with the cress. Tip: Also tastes good with mozzarelaa instead of sheep cheese.
