Peel and finely grate the carrots, apples and ginger. Add the juice and the zest of the orange as well as the lemon juice and mix with the preserving sugar. Bring everything to a boil in a saucepan, always stirring well. Everything has to cook vigorously for 5 minutes.
The puree can still be pureed with the hand blender. Then fill everything still hot into small screw-top jars and close tightly.
