Instructions

  1. Salt and pepper the rabbit legs, then sauté in butter. Add the onions and thyme, braise with them and then deglaze the whole thing with the wine.
  2. Cover and braise on a low level for 1 hour. Turn the legs now and then and add wine if necessary.
  3. Mix the sauce with creme fraîche and mustard and season with salt and pepper (if it is too thin, let it boil down a little). Noodles go very well with this.
