Cut off the stalk from the radicchio and hold it with the cut side directly under cold, running water. Carefully pick the radicchio apart. Roughly pluck the radicchio leaves into pieces with your hands and tear them into bite-sized pieces.
Peel and quarter the pears and remove the core. Cut fine gaps. Cut the dried tomatoes into fine strips.
Mix the pears with the radicchio and the garlic paste, then sprinkle the walnuts and tomatoes on top.
