- Grate the parmesan. Clean and quarter the radishes. Peel and finely dice the radi. Wash and chop sorrel. Core the avocados and remove the pulp.
- Roughly mix the radishes, radi and 1 tablespoon oil with a hand blender. Remove and set aside.
- Now finely puree the sorrel, avocado, cheese, salt, pepper, sambal oelek and the remaining oil with a hand blender. Stir in the radish mixture.
- Finally stir in the lemon juice, season to taste and serve.
