Instructions

  1. For the dressing, cut the onion into small cubes and lightly salt.
  2. Put the water and vinegar in a medium-sized bowl, add the salt and sugar and stir with a whisk until the salt and sugar have dissolved. Now add the oil and continue stirring until a uniform emulsion results.
  3. Add the finely chopped onion and, depending on your taste, the sprinkling herbs.
  4. Wash or clean the vegetables and slice them into small strips. This works best with a universal vegetable slicer with a small strip insert, e.g. from Börner.
  5. Add the grated vegetables to the marinade bowl and mix well. Let it steep for about half an hour and mix it up every now and then.
