Instructions

  1. Take the kumquats out of the package and wash them off with hot water. The shell is usually waxed, which is edible but does not allow the chocolate to stick.
  2. Rub the fruit dry, knead the baby oranges a little, then they will be sweeter.
  3. Melt the chocolates in a double boiler.
  4. Skewer the fruit on a toothpick and coat 10 pieces in white and 10 pieces in dark couverture.
  5. Place the chocolate-coated fruits on a very cold baking sheet.
  6. After the kumquats have cooled completely, they can be removed from the tray with a knife.
  7. It is best to eat the fruit with a munch so that the acidity of the fruit combines with the sweet chocolate.
