Roughly chop the chocolate and cantuccini. Chop the almonds as well, unless you bought them chopped. Mix the mascarpone, quark, sugar and vanilla sugar until smooth. Whip the cream until stiff and fold into the cream. Fold in the chocolate, cantuccini and almonds, except for something to garnish. Fold in the raspberries too, but don`t stir too long, otherwise everything will turn pink. Sprinkle the remaining chocolate, almonds and biscuits over the cream.
