Instructions

  1. Mix all ingredients for the dressing together in a large salad bowl.
  2. Clean the carrots and remove any greens. Wash the apples and remove the core. Wash the spring onions as well and cut into fine rings. Peel the kohlrabi. Put the sunflower sprouts on a sieve and wash thoroughly.
  3. Finely grate the carrots and apples with the skin. This works particularly well if you use organic carrots and organic apples and the carrots have a thin skin. If this is not the case, you can of course peel the carrots and apples. Finely grate the kohlrabi as well. Add the grated fruit and vegetables to the dressing and mix everything well. Finally fold in the spring onions and sunflower sprouts and season the salad again if necessary. Cover and leave to steep in the refrigerator for at least an hour before consumption.
  4. The amount is enough as a side dish for approx. 4 servings. If you want to eat the salad as a main course, the amount is enough for 2 servings.

  6. Sunflower sprouts can be easily pulled from peeled and unroasted sunflower seeds. To do this, the sunflower seeds are soaked in plenty of water for 12 hours. Then the water is poured off and the kernels rinsed with plenty of water. The germination time is 2 days, whereby the sprouts have to be rinsed twice a day. However, you shouldn`t let the sunflower seeds germinate any longer, otherwise the sprouts will become bitter. Special germination jars or devices are suitable for germination. Sprouting jars can be bought for little money in certain drugstores. You can also make a germinating jar from a large screw jar. To do this, you poke a few holes in the screw cap with a can opener for canned milk and place the jar with the lid at an angle downwards for germination.
  7. Sunflower seeds are very fatty (approx. 40%), 2/3 of which are high-quality unsaturated fatty acids. In addition, sunflower seeds are very rich in protein (approx. 30%) and rich in minerals. They contain a particularly large amount of iron, phosphorus and magnesium as well as copper, manganese, potassium, calcium, zinc, iodine and cobalt. Among the vitamins, the most important is vitamin E. Sunflower seeds also contain vitamins from the B group as well as vitamins A, D and K.
  8. Sprouting increases the vitamin content of the kernels and the other ingredients are more usable for the human body.
  9. Sunflower sprouts taste very fresh and nutty.
