Clean or peel the vegetables. When making beetroot, please either wear gloves or oil your hands and the grater. Roughly grate the beetroot and kohlrabi, cut the spring onions into rings. Put everything in a salad bowl. Mix the sauce ingredients well together, pour over the salad ingredients and mix again. Let it steep for at least an hour.
Tip: If you like, you can add a finely grated apple or mix in the sesame seeds and some toasted sesame oil before serving. For everyone who likes spiciness: A little finely chopped chilli or chilli flakes also work.
