Finely slice the white cabbage, sprinkle with salt and knead with both hands until the juice comes out and the cabbage is really moist, pepper, add caraway seeds (possibly as a powder), onion cubes, vinegar to taste and plenty of oil.
The raw coleslaw can still be changed, e.g. mix 2-3 raw finely grated carrots in it, or red or green paprika strips.
We like to go with breaded sheep`s cheese and small meatballs. But it also tastes excellent with roast pork and ensures good fat digestion.
