Put the minced meat in a bowl and pull it apart slightly. Then add the spices, a small portion of mustard and the onions, which have been grated almost to a pulp over a very fine grater. Separate the egg and add the yolks. Put everything in the fridge.
After an hour an old bread roll in lukewarm water for a short time! soak and squeeze well. Now take the meat mixture out of the refrigerator and mix in the bread roll. Shape the mixture into meatballs and press them flat.
Heat a good pan and froth a mixture of approx. 30% clarified butter and 70% vegetable oil in it. Fry the meatballs in it all around.
