Instructions

  1. Put the bulgur in a bowl (not too tight), pour the hot broth over it and let it soak for 10-15 minutes.
  2. Finely dice the onion, bell pepper and courgette and sauté briefly in a pan with the olive oil. Add about 1 teaspoon of sugar to the pan and let it caramelize briefly.
  3. Sauté the tomato paste and deglaze with a little water and season with salt, pepper and paprika (possibly with chilli flakes if you like it hot). Add to the bulgur while it is still hot.
  4. Also cut the tomato and cucumber into fine cubes.
  5. As soon as the mixture has cooled down a bit, add and season with vinegar, oil and spices.
  6. If you want, you can also add some mint to the salad. That gives a fresh, oriental taste.
  7. To serve, the salad can be squeezed into a small bowl and turned over.
  8. Personally, I find chilli threads or red radish sprouts to garnish very funny.
