Instructions

  1. Leave the goose lard in a large saucepan and briefly sweat the chopped onion in it. Add the grated red cabbage and sweat well. Deglaze with red wine and add all the other ingredients (salt, vinegar and sugar, however, only in small amounts!). Stir well and let simmer in a closed pot for approx. 30 - 40 minutes. Be careful that it doesn`t burn! Stirring occasionally. At the end of the cooking time, season again with vinegar, sugar and salt.
  2. It is especially tasty when it can go through the night and is warmed up the next day.
  3. Note: To get Crema di Balsamico, you have to reduce twice the amount of normal red balsamic vinegar on the stove.
