Slice the red cabbage into fine strips. Dice the onions and cut the apples into wedges. Cut the ginger into slices.
Heat the goose lard in the pressure cooker and fry the onion first and then the cabbage. Deglaze with the red wine. Add all ingredients except the jam and close the lid. Cook under pressure for 12 minutes.
Take off the stove and slowly let the pressure escape.
