Quarter the red cabbage and slice into strips. Leave the bacon in a large saucepan, add clarified butter. Dice the onions and let them turn to glass. Dice the apples and add the cubes of 5 apples, sprinkle with sugar and caramelize a little.
Add the cabbage and deglaze with vinegar and red wine. Peel the orange, press the cloves into the orange peel and add to the cabbage with the bay leaves.
