Instructions

  1. Remove the leaves from the red cabbage, wash and quarter the cabbage, remove the stalk. Cut or slice the cabbage very finely. Peel and dice the onion. Peel, core and dice the quinces.
  2. Melt the crackling lard, roast the onion light yellow in it, add the cabbage, sweat. Add the quince, bay leaf, some cloves, salt, sugar, red wine vinegar, cranberries, red wine and cook until cooked.
  3. Mix 1 tablespoon wheat flour with 2 tablespoon water and bind the red cabbage with it. Season to taste with salt, sugar and red wine vinegar.
