  1. To start, chop the onions and garlic and sweat them in a larger saucepan with the tomato paste and a little salt and pepper in olive oil for about 3 minutes over medium heat. Then pour in the water and simmer for 6 minutes, possibly reducing the heat.
  2. Now add the couscous and thicken everything for about 5 minutes, until there is no more liquid on the bottom of the pan and you have to scratch slowly while stirring. At this moment take the pot off the stove and let everything cool down for about 10 minutes.
  3. At the same time, prepare the vegetables. Chop the peppers, tomatoes and parsley a little, then chop with a dash of olive oil in a blender jar to a nice, finely chopped vegetable mass. The result shouldn`t be too fine (not a pulp), but look something like bruschetta toppings.
  4. Finally, chop the cucumber and mix the remaining ingredients into the dressing, which of course can also vary and experiment.
  5. Finally, mix everything together in the salad bowl and place in the refrigerator. Ideally, the salad should be left to steep overnight, but it also tastes very tasty when it is fresh and lukewarm!
  6. Don`t be put off - there are many ingredients, but this salad is actually pretty quick. The three essential steps (onion and couscous base, pepper and tomato mixture and dressing) can be easily prepared.
  7. In addition, it should be said right away that the salad can be changed extremely well - almost every ingredient can be left out or doubled, but it does not affect the result. Of course, many other ingredients, such as. B. Feta (also fits perfectly in) can be added.
  8. In my experience, the salad is a real hit at every party and practically everyone tastes good. In addition, it can be kept for a long time in the refrigerator, as there are no really sensitive ingredients in it. Vegetarian to vegan, it is also extremely nutritious.
