Instructions

  1. Squeeze the oranges and cook with the sugar to a syrup for ten to 15 minutes. Let cool slightly.
  2. Beat the egg yolks with the powdered sugar to a light cream. Whip the cream until stiff. Slowly fold the cooled orange syrup with the liqueur - ideally Red Orange from Bols - into the egg yolk and stir carefully. Fold the egg yolk and orange mixture into the cream. Possibly add more liqueur to the mixture to adjust the color and taste. If you feel like it, you can only carefully fold in part of the liqueur without mixing it with the mass - this creates fine red lines in the ice.
  3. Chill the parfait mixture for 5 hours if it freezes longer, take it out of the freezer an hour before serving or put it in the refrigerator two hours beforehand.
  4. Red Orange is particularly suitable because it gives the parfait a slightly tart taste and it also gives it a beautiful color. However, other orange liqueurs can also be used.
  5. Since the parfait is not very sweet - especially not if you use the slightly bitter Red Orange, it goes well with sweet fruits or flambéed bananas.
