Instructions

  1. If possible, bring the red wine with sugar and spices to the boil the day before in a small saucepan so that the pears are well surrounded by liquid later.
  2. Peel the pears, halve the core. Pour into the red wine and simmer for 5-15 minutes, depending on how hard it is, until soft. Turn around in between. Let cool in the brew - covered with it if possible.
  3. Remove the pears from the brew. Pour this through a sieve and bring to the boil until the volume is reduced to approx. 100 mm.
  4. Melt the chocolate in the hot brew and stir everything until homogeneous. Possibly stir in the orange liqueur. Let cool down.
  5. In between, heat the almond leaves in a dry pan, turning them occasionally, until they are browned. You shouldn`t do anything else.
  6. Whip the cream - possibly add a little more sugar. Season the cooled red wine and chocolate brew again to taste and stir in.
  7. Arrange 2 half pears on each plate. Pour the chocolate cream over it and garnish with the almond leaves.
