Instructions

  1. This dish is set up for 2 people as a starter or for one person as a main course.
  2. If you like tartare but want to prepare it a little differently, you have a lively alternative here. It looks particularly beautiful when served in a circle.
  3. Mix the tartare, capers, lemon zest, pepper and salt as well as the egg yolk and season to taste.
  4. For the dressing:
  5. The dressing should be tasted slightly sour. Simply mix the lemon juice and good, virgin olive oil. Do not give the tartar yet, otherwise it would start to denature.
  6. To serve, place the black bread on the plate, place the tomato on top, top with the tartare and the chives.
  7. Now prepare the hollandaise sauce:
  8. This is a very simple variant and can of course be replaced by another, preferred sauce hollandaise recipe.
  9. First whisk the egg yolk with the white wine and the not hot (maximum lukewarm!) Broth. Now melt the butter separately. It must not be hot either, otherwise let it cool down a bit. Now place the egg yolk mixture on a water bath (the egg should be warm, but not hot) and slowly pour the butter into a trickle while whipping over the egg yolk mixture. A blender / magic wand can also be used for this. When the hollandaise sauce has thickened but is still runny, add a little squirt of lemon and possibly a little truffle oil.
  10. Now add the dressing to the tartare and serve the hollandaise sauce with the tartare. Very tasty and refreshing.
