Preparation: Dice tomatoes, peel and chop the carrots, chop the onion and garlic, prepare the vegetable stock.
Steam the onion and garlic in oil, as soon as the onion is translucent, I add the tomato paste, tomatoes and carrots. Now everything has to cook for 15 minutes. Then add the broth, the tomatoes, the herbs and the sugar. Now I let everything boil again for 15-20 minutes.
Now I take the pot off the stove, add the cream and the crème fraîche and puree everything until it has a nice, creamy consistency. Now is seasoned with salt and pepper and then you can serve. As soon as the soup is on the plate, you can add a few more basil leaves.
