Today there is a do-it-yourself rhubarb spritzer for spring. The recipe is really simple and if you don`t feel like having a spritzer, just drink it as a smoothie. The idea came to me spontaneously, because I searched the internet for sensible rhubarb drink recipes and couldn`t find one that was appealing. Since I still had a pineapple overripe and I wanted to do something with rhubarb for you, I just decided on this combination. The great thing about it is that you can clearly taste the rhubarb, even if it is less in quantity. Do you want to know what I always do with this drink as soon as it is nice and warm outside? I`ll fill up a carafe right away and sit on the balcony in the sun, that`s all I need to be happy.
1. First the pineapple and rhubarb are peeled. Now cut the rhubarb into small pieces and place in a blender or measuring cup.
2. Halve the pineapple and cut out the stalk, also dice the pulp.
3. Finally, add the honey or agave syrup and the apple juice to the container and mix or puree everything.
4. Now put some of the puree into a glass and fill up with ice cubes and mineral water.
