It is difficult to call this rice dessert porridge! Delicate rice porridge with sweet egg yolks and salted caramel make this dish delicious. The dessert is delicious both warm, freshly cooked, and cooled down.
Rinse the rice until clear water. Put the washed rice in a saucepan and pour in 260 ml of water. Place the saucepan on moderate heat.
From the moment it boils, cooks the rice over low heat for about 10-13 minutes until all the water is absorbed.
Pour cream into the rice, stir. Cook the rice over low heat until tender. This will take another 6-7 minutes. Remove the saucepan from heat.
Separate the whites from the yolks. Put two yolks in a bowl and add sugar.
Whisk the yolks until the sugar dissolves.
Add the sugar-beaten egg yolks to the rice porridge. Stir the rice and return the saucepan to the stove.
Boil rice with yolks for another 3-4 minutes, stirring constantly.
Make caramel. To do this, heat the cream in a saucepan until hot. Pour sugar into a skillet and place it on the stove.
Melt the sugar over moderate heat until light brown.
Remove skillet from heat. Gently pour the hot cream into the skillet with the caramelized sugar in a thin stream.
Stir in the cream and sugar and return to the heat. Boil on low heat for 2-3 minutes, until smooth.
Add butter, stir and continue cooking for another 1-2 minutes.
Remove skillet from heat and add salt. Stir. The salted caramel is ready.
Place the rice porridge in bowls or plates.
