Bring the rice pudding with milk and salt to the boil and let it soak for about 25 minutes, stirring frequently.
Separate the egg, mix the yolks with the vanilla sugar, stir into the rice. Beat the egg white until stiff, stir in the sugar and also mix in the rice pudding. Let it cool down (it`s faster in a water bath).
Whip the cream until stiff and fold into the rice pudding. Finally cut the fruit into small pieces and fold in.
