Lightly toast the walnuts in a coated pan without adding any fat. Then dust with powdered sugar and let it caramelize while stirring. Season with a pinch of salt. Then place the caramelized walnuts on a plate and allow to cool.
Meanwhile, roughly chop the amarettini. Rinse, halve and quarter the apples, cut out the cores and dice the apple quarters. Mix with lemon juice and honey.
Roughly chop the cooled caramelized walnuts. Stir the ricotta until smooth and sweeten with a little honey if you like. Then distribute on plates, sprinkle with the apple cubes, chopped, caramelized walnuts and the chopped amarettini, sprinkle with some ground cinnamon if you like and serve immediately.
