Salt and pepper the roast all around and then sprinkle with the cloves (very important, gives the wonderful taste).
Let the olive oil get hot, fry the meat all over, sauté the chopped onion and the smoked meat, pour over the red wine and the chopped tomatoes, complete with juice. Put on the lid and stew for about 2 hours.
Then take out the meat, remove the cloves, cut into slices. Season the sauce with salt and pepper, mix the flour with the sour cream and pour into the sauce while stirring. Dip the meat slices in, then arrange on the platter and pour sauce over them.
Macaroni and various vegetables taste best with it.
