Instructions

  1. Roughly dice the tomatoes, leaving the pulp and seeds on. Heat the oil in a pan, fry the squeezed garlic and finely chopped onions in it. Turn down the heat. Let the tomatoes stew in the pan for about 3 minutes. Deglaze with approx. 1-2 tablespoon balsamic vinegar, season with herbs and spices, keep warm.
  2. Wash the rocket and divide it on two plates. Roll the roast beef slices and spread them on the salad. Then arrange the sauce in between. Serve immediately.
  3. The dish is made very quickly and tastes good with ciabatta or baguette, but can also be done without bread.

  5. Instead of roast beef, I could also imagine cold meats or ham. If you like, you can also top with roasted pine nuts or freshly grated Parmesan.
