Instructions

  1. Halve the peppers, remove the inside and cut into bite-sized pieces. Peel the mango and chop half of it bite-sized. Peel half the onion and cut into fine cubes.
  2. Heat some butter in a high pan and fry the onion cubes until translucent. Add the pepper pieces and cook for a while. Now fill up with the vegetable stock, season with salt, pepper and paprika powder and season well. Continue to steam until the peppers are soft but still firm to the bite. Now add the mango pieces, refine with the cream and let steep for a short time.
  3. Drizzle the salmon fillets with a little lemon juice and fry them in hot clarified butter in a pan.
  4. Finally, season the finished fish with a little pepper and serve with the paprika and mango vegetables.
