Cook the sweet potatoes with their skins in salted water, peel them and cut into approx. 1.5 cm cubes.
Peel the peppers if necessary, remove the seeds and white partitions, cut the pulp into pieces. Peel and dice the onion and garlic.
Heat the oil in a pan and sweat the peppers in it, add the onion and garlic cubes, sauté and cook with the lid closed for about four minutes. Possibly add one to two tablespoons of water. Season the vegetables with salt, pepper, paprika powder, chilli and a little lemon juice.
Meanwhile, fry the sweet potatoes on all sides in a second pan. Season with salt and pepper, mix with the paprika vegetables, season again and serve sprinkled with parsley.
