Soak the chia seeds in 10 tablespoons of coconut milk or other milk for about 20-30 minutes. In the meantime, wash, peel and cut the fruit into small pieces. Mix the remaining ingredients together, add the fruit and stir in the swollen chia seeds. Season to taste and possibly add sugar, depending on the sweetness of the fruit.
If you like, break a few cookies into small pieces and sprinkle over them as a topping just before serving. Great as a party dessert or as a souvenir at barbecue evenings. The fruit can of course be varied and the chia seeds can also be left out.
