Wash the rocket and remove the stems that are too long and hard. Fan-shaped (with the stem facing inwards) on a plate.
Peel the avocado, remove the stone and dice the pulp. Spread the avocado cubes on the rocket (in the middle of the plate). Put a few squirts of lemon juice on the cubes. Peel the onion and cut into rings. Spread the onion rings over the avocado cubes. Sprinkle everything with salt and freshly ground pepper.
Mix the olive oil, honey, balsamic vinegar and vinegar into a dressing and pour over the salad.
