• 2 carrot (s)
• 0.75 ¾ Mango (s), ripe
• possibly pine nuts
• 3 tablespoon olive oil
• 3 tablespoon balsamic vinegar, light
• some nutmeg

• Herbs (salad), freeze-dried or fresh

Instructions

1. Carefully wash the rocket in cold water and spin dry with a salad spinner. Grate the carrots as finely as possible. Dice as much mango meat as desired, not too small. Put everything in a bowl.
2. Mix the oil, vinegar, the spices and herbs into a dressing, pour over the colorful salad and mix well. If you like, lightly toast the pine nuts in a pan and pour over the salad before serving.
3. Freshly baked herb baguette tastes good with it.
