Carefully wash the rocket in cold water and spin dry with a salad spinner. Grate the carrots as finely as possible. Dice as much mango meat as desired, not too small. Put everything in a bowl.
Mix the oil, vinegar, the spices and herbs into a dressing, pour over the colorful salad and mix well. If you like, lightly toast the pine nuts in a pan and pour over the salad before serving.
