Instructions

  1. The salad is enough for 4 people as a side dish or starter, as a full light meal the amount is enough for 2 people.
  2. Sort out the arugula, remove the coarse stems and cut the arugula into an edible length. Wash the radishes and cut into thin slices. Peel, quarter and thinly slice the onion. Crumble the cheese and chop the capers through once. Put everything in a bowl and add the sunflower seeds.
  3. Beat the oil and the juice of a squeezed lemon together and season with salt and pepper. To underline the nutty taste of the rocket, you can stir in a little walnut oil.
  4. Mix the dressing with the salad thoroughly and serve immediately.
  5. A dressing made from oil and lemon juice is more digestible and healthier than with vinegar and, above all, very fresh and a great change in summer salads.
