Quarter the mushrooms and cut the onions into large rings. Heat some olive oil in the pan. Fry the onions and diced bacon for 2 minutes over medium heat. Then add the mushrooms. Fry, stirring constantly. Season with pepper, salt and herbs.
After 5 minutes, add the sunflower seeds and fry until the mushrooms are soft. Arrange the rocket on a large, flat plate. Spread the seared meat on the rocket. Cheese and a dash of balsamic vinegar on top (depending on your taste).
