Wash and clean the rocket and lettuce and cut into bite-sized pieces. Peel the avocado (it should give in slightly when pressed, only then is it ripe), remove the stone and cut the pulp into cubes. Wash and quarter the cherry tomatoes.
Mix everything in a large bowl. Then crumble the sheep`s cheese over it and add the cashew nuts.
Mix the balsamic vinegar, olive oil, salt and pepper into a dressing and add to the salad. Mix everything well. If the dressing seems too little, add vinegar and oil in a ratio of 1: 2.
The salad is also great as a starter or side dish - the specified amount is enough for 4 - 6 people.
