Wash and pat dry the meat, cut into strips and season with salt and pepper. Heat the herb butter in a pan and fry the chicken breast in it.
Clean and wash the rocket and shake dry. Peel the onions and cut into rings. Wash, clean and cut the pepper into strips. Wash and quarter the tomatoes. Mix everything in a salad bowl.
Peel off the garlic cloves, press through and mix with vinegar and oil. Season with salt and pepper and pour over the salad. Mix everything well.
Put the salad on 4 plates. Spread the chicken strips, preferably still warm, on the salad. Sprinkle with grated parmesan and serve.
