Sort out the rocket, clean, rinse and shake dry. Remove the hard stems and pluck the leaves a little smaller. Rinse, clean and finely slice the radishes. Rinse the spring onions, cut the white and light green into fine rings. Dice or crumble the feta cheese, drain the capers. Put all the prepared ingredients in a bowl.
Whisk the granulated stock, 4 tablespoon water, vinegar and oil, season with salt and pepper. Mix all salad ingredients with the dressing, arrange and serve.
