Instructions

  1. Clean and wash the rocket, spin dry and spread on the plates.
  2. Cut deeply into the figs at the base of the stalk crosswise. Then press the figs together at the bottom with your thumb and forefinger so that they open and the inside of the fruit can be seen, then place them in the middle of the salad. Pick the ham and mozzarella by hand and spread them next to them. Sprinkle a few mint leaves on top. Scrape off wafer-thin strips of parmesan with a knife and sprinkle on the salad.
  3. Mix the olive oil, honey and lemon juice together, season with a little salt and freshly ground pepper and drizzle over the salad as a dressing.
  4. The icing on the cake is the honey warmed in a water bath, which is carefully spread drop by drop over the salad with a spoon.
