Wash the rocket, remove the stalks and divide on 2 plates. Halve the cherry tomatoes and place on top. Sprinkle some balsamic vinegar over it. Briefly toast the pine nuts in a pan without fat and sprinkle them on the salad. Slice the parmesan thinly over everything.
