Knead the butter, flour, salt, pepper and water to form a smooth dough. Roll out between two layers of cling film. Peel off the foil, place the dough in a mold (20 x 25 cm). Chill for 1 hour.
Preheat the oven to 180 ° C. Roughly chop the rocket and spinach. Finely dice the tomatoes.
Pre-bake the dough in the oven for about 15 minutes.
Mix together the cheese, sour cream and eggs. Mix in the spinach, rocket, tomatoes and spring onions, season with salt and pepper, pour into the dish.
Bake the quiche in the oven for approx. 45 minutes until golden brown.
