Wash the rocket and arrange in a circle on a plate, leaving out the center. Spread the raspberries evenly on top.
Roughly chop pre-purchased caramelized walnuts with a knife. Or roast walnuts yourself with a little brown sugar in the pan, stirring constantly. Preferably with Chinese disposable chopsticks. Then distribute evenly on the salad.
Mix the vinaigrette and spread over the salad.
Finally, gently fry the goat cheese with a little rapeseed oil on both sides over low heat and place in the middle of the salad.
